A couple of times per year I want to make a casserole of young beef liver. Chopped into small cubes, panfried and seasoned with white pepper, salt, fresh thyme. Then put into a casserole with crushed tomatoes. Then I chop some yellow onions and canned mushrooms and fry them too before I add them to the casserole. Add some tomato purée and let it boil for a while. Serve it with rise and a glas of non-alcoholic beer. Then I’m happy. My husband sorts out the mushrooms but he enjoys the rest. Well, enough to finish a plate a couple of times per year anyway, lol. My sons are not so accommodating.. so they got chicken with the rise instead.
A very busy day today and managed to get a lot done. So the dinner was extra nice as a reward of all the hard work. Now, I’m going to relax for a bit and enjoy the evening.
