Vasalopps-Sunday

Last night I made lamb fillet for dinner which I rolled in minced garlic, thyme, parsley, basil and rosemary and then wrapped in bacon. Gave the meat-rolls some color in the pan and then slow cooked in the oven at low temperature. Served with a white wine sauce reduction and pasta. Asparagus, sugar peas, mushrooms and cherry tomatoes on the side. A red wine from Spain / Catalonia to go with (Les Sorts, number 7021). Yum. A dish I will make again!

Crashed in our corners watching Vasaloppet with close to 16000 skiers struggling in the snowy weather. Much more snow than the race last weekend. We are a bit tired today (lol) so no big plans other than relaxing and enjoying the day off.
