Throwing away food is something I try to avoid and just heating up leftovers is not always the best thing to do. So why not turn your leftovers into a new yummy dish instead?

This pie, for instance, is filled with leftover ham, roast beef, blue cheese, broccoli, bell peppers and sour cream. Oh and an egg to keep it together. Simple yet delicious.

imageMy white peonies are in full bloom now. I am so glad they are a little
bit behind in blooming compared to my pink peonies – this way I can enjoy flowers a bit longer. These white ones have the most amazing fragrance too.

So who are you all cheering on tonight? My heart goes to Holland!

 

Stop motion animations

Nick Park. A British director behind the production company Aaardman Animations. He is a personal favorite of mine with brilliant movies andimage series like “Wallace and Gromit”, Chicken Run and “Shaun the Sheep”.

If you haven’t seen any of his movies I can truly recommend them. Six of his movies have been nominated for Academy Awards and four of them have actually won. They have also won several BAFTA awards and also been nominated an Emmy Award.

My personal favorites are “Chicken Run” and the short movies with Wallace and Gromit such as “The wrong trousers”, “A grand day out” and “A close shave”.

So – if you have nothing to do on a rainy day – please explore the adventures in these movies! You won’t be disappointed!

Friday

Today the scale was not being nice to me so I walked to the subway this morning. Second day in a row. I completely blame my friend last night for serving such excellent food. And home made bread fresh from the oven. Who can resist?

I had to walk some errands at work too so I got a couple of extra kilometers on my tracker. It’s going to be interesting to see how many steps I have taken today (a little over 15500 when the day came to an end .. ) .

The scale might be laughing at me tomorrow too.. bought us a treat for tonight.. since it is Friday.. and we deserve it..

Taxi-mom

My sister always writes aboimageut her being a taxi-mom and I think I might qualify under that label too.. and really – I don’t mind. They years go by so fast and I am determined to try to see the good part in the “now” rather than long for something that might come along later.

Picked up my youngest at the day camp – went to get his shots – dropped him back off at the day camp again. Grocery shopping, laundry, dinner .. you know.. the everyday stuff..

Shrimp sandwich and breakfast rolls

Got off early today so I went shopping for a birthday present. No luck in town so I made a stop at the Liljeholmen mall. There I started with lunch – a really good shrimp sandwich – on white bread, with lettuce,  boiled egg, cucumber, mayo and lemon. Yum.

Then I went looking for the present and I found what I wanted after a bit of struggling.  But mission accomplished in the end. Gifts are important – I like to put some heart into both the gift and the wrapping. Makes it personal!image

When I came home I made breakfast rolls with poppy seeds on (noticed I have made an error with the recipe – 2msk caster sugar is missing).

The kids and I treated ourselves a taste while they were still warm so the butter and cheese kind of melted.. Soooo delicious!

Today it has been sunny and rainy every other hour all day. We have spent the day at our second paradise celebrating my father-in-law who has his birthday this week. We managed to get here between the showers and also go for a short walk inbetween all the goodies that we have been treated. My jawbone bracelet has been buzzing several times today.. (it is programmed to do so if I sit still for 60min) .

The rain finallyimage stopped and when driving home it was really sunny and nice.

Next week is a full week – no bonus days off – but we start our summer-time at work so a few hours less per week which is great!

Laundry

A good day. Managed to sleep in a bit.  And no headache today. Felt pretty good actually. So I decided to clean the house..

The pollen is almost gone now so I washed our bed linen and let them dry outside. I just love how they smell afterwards. It is the best thing – to go to bed and feel that wonderful fresh scent in the duvet cover.

As you can see, the elder tree is in full bloom now, so I picked another batch of flowers and prepared some more lemonade. I might pick some more flowers and put in the freezer. Then I can make lemonade in the fall too.

And guess what.. it is only Saturday.. so one more day off!
Life is pretty good!

I was surprised today with a very special gift from my sister in California. I just love it. It is a living locket from Origami Owl filled with special charms connecting us. It was a very precious gift with a lot of thought and heart. I will wear it with pride and joy and cherish it! Puss o kram <3 Nikki!

Today it is Midsummer day and even though I was overwhelmed with joy about the gift it still couldn’t cure the headache I woke up with. So, I am home relaxing while my family is enjoying the festivities with our friends hoping to feel better in time for the bbq tonight. After a long nap and some lunch I am actually coming alive again and I think there is hope for me tonight!

My husband is a unicyclist. Even competing in the Swedish championships. This week he bought a new toy and guess what he will do on our vacation.. I am very proud of him and as they say – if you can’t beat them – join them.. So maybe  I will give it a go.

This week has been filled with emotions and appointments so I am really looking forward to the three-day-weekend. Tomorrow it is midsummer which will be a lot of fun. We always have a great time with our group of friends. I have known most of them since we were teenagers so we know each other really well.

Now crashed in my corner .. have a great evening!

Family

Family back together again – just picked up the teenagers returning from their camp. They sat quiet in the car all exhausted on the way back. I interpret that as they have had a great time! The person in charge of the trip was happy and pleased so that’s a good sign.

Soccer soccer soccer on tv. Tonight I will cheere on Holland and Spain. Holland is doing good so far – and I just loved it when they outplayed Spain last week. Amazing. I am not really into soccer but it is a matter of survival right now and not being completely left out from the topics to discuss among colleagues and friends.
